Peanut Butter Granola Silver Dollar Pancakes

Ingredients

    3/4 cup Hungry Jack® Original Syrup

    1/2 cup Jif® Natural Peanut Butter Spread & Honey

    2 cups Hungry Jack® Original Pancake & Waffle Mix (Add Milk, Oil & Eggs)

    1 1/3 cups milk

    2 large eggs

    1 1/2 cups granola cereal, divided

    1 large banana, sliced

    Crisco® Butter Flavor No-Stick Cooking Spray

Directions

  1. COMBINE pancake mix, milk, eggs and remaining 1/4 cup peanut butter in large bowl. Coarsely crush 1 cup granola cereal. Stir into batter.
  2. WHISK together syrup and 1/4 cup peanut butter in medium microwave-safe bowl until smooth. Microwave on HIGH 30 to 45 seconds to warm.
  3. COAT griddle with no-stick cooking spray. Heat over medium heat. Pour 1/8 cup (2 tablespoons) batter for each pancake onto griddle. Cook pancakes until bubbles begin to break on surface. Turn and cook until golden brown. Serve pancakes topped sliced banana and peanut butter syrup. Sprinkle evenly with remaining 1/2 cup granola cereal.
